INGREDIENTES
Fish
- 2 fillets (300g) flounder
Vegetables
- 10cm daikon, grated
- A few sprigs of mitsuba, chopped
Starch
- 1 tbsp potato starch
Oil
- 5 tbsp salad oil
Seasoning
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 1 tsp sugar
- 1 tbsp soy sauce
- 1/3 tsp dashi powder
- 💧 100ml water
PASOS
Grate the daikon and lightly squeeze out excess water.
Pat the flounder fillets dry and coat them with potato starch.
Heat salad oil in a frying pan and place the flounder skin-side down. Pan-fry on low heat for about 5 minutes, then flip and cook until fully done. Remove the flounder from the pan.
Wipe the oil from the pan with a paper towel, add the seasoning ingredients (sake, mirin, sugar, soy sauce, dashi powder, and water), and heat over medium heat.
Once the mixture boils, add the flounder back to the pan and spoon the sauce over it while simmering on low heat for 2 minutes. Add the grated daikon and simmer briefly.
Transfer the flounder and sauce to a serving dish and garnish with chopped mitsuba.
