INGREDIENTES
Rice
- 🍚 2 bowls cooked rice (400g)
Fish
- 🐟 200g sashimi-grade bonito
Egg
- 🥚 2 egg yolks
Vegetable
- To taste kaiware sprouts
- 2 slices thinly sliced ginger
Seasoning
- 2 tbsp sake
- 2 tbsp mirin
- 🧂 1 tbsp sugar
- 2 tbsp soy sauce
- 💧 100ml water
PASOS
Cut the bonito into bite-sized pieces.
Trim the roots of kaiware sprouts and cut into 1.5cm lengths.
Bring water to a boil in a pot, blanch the bonito until the surface changes color, then drain.
Add sake, mirin, sugar, soy sauce, water, and ginger to a pot and heat until boiling. Add the bonito and simmer on low heat for 10 minutes. Turn off the heat and let it sit for 30 minutes.
Remove the bonito, heat the remaining sauce on high until it thickens.
Serve rice in bowls, top with bonito, egg yolks, and drizzle the sauce. Garnish with kaiware sprouts.
