    • 🍄 100g enoki mushrooms
    • 🥕 1/3 carrot, julienned
    • 20g chives, chopped
  • Seasoning

    • cornstarch, as needed
    • 1 tsp salad oil
    • 1 tsp sesame oil
  • Marinade

    • 1 tbsp sake
    • 1 tsp soy sauce
    • 1 tsp grated ginger
  • Chinese Sauce

    • 1 tbsp sake
    • 1/2 tsp chicken stock powder
    • 1/2 tbsp soy sauce
    • 200ml water
  • Thickener

    • 1/2 tbsp cornstarch
    • 1 tbsp water

Cut enoki mushrooms into thirds, julienne the carrot, and chop the chives into 3cm pieces.

Pat the mackerel dry with paper towels and cut into bite-sized pieces.

Mix the marinade ingredients in a bowl, add the mackerel, and let it sit for 10 minutes. Drain the mackerel and coat with cornstarch.

Heat 1 tsp salad oil in a pan, place the mackerel skin-side down, and fry until golden. Flip and cook for another 3 minutes until fully cooked. Remove from the pan.

Wipe the pan clean, add the Chinese sauce ingredients, and bring to a boil. Add enoki and carrot, cooking for 3 minutes until softened. Stir in the thickener and cook until the sauce thickens. Add chives and drizzle with sesame oil.

Plate the mackerel and pour the Chinese sauce over it.
