INGREDIENTES
Meat
- 200g ground meat
Vegetables
- 🍆 2 eggplants (160g)
- 🥬 1/2 celery stalk (50g)
Oil
- 1/2 tbsp olive oil
Herbs
- 🌿 A pinch of chopped parsley
Meat Seasoning
- 🧂 1/4 tsp salt
- A pinch of pepper
- 1 tsp curry powder
Stew Ingredients
- 🍅 1 can (400g) diced tomatoes
- 💧 50cc water
- 🧂 1/2 tsp salt
- A pinch of pepper
Yogurt Sauce
- 🧂 A pinch of salt
- 🍶 100g unsweetened yogurt
- 🍋 1/2 tbsp lemon juice
- 🧄 A pinch of grated garlic
PASOS
Cut the eggplants into bite-sized pieces and slice the celery diagonally into 7mm pieces.
In a bowl, mix the ground meat with the seasoning ingredients until sticky.
Heat olive oil in a pan, scoop the meat mixture into small balls, and cook until browned. Add eggplants and celery, stirring until coated with oil.
Add the stew ingredients, bring to a boil, cover, and simmer on low heat for 10 minutes.
In a bowl, mix the yogurt sauce ingredients until smooth.
Serve the stew on a plate, drizzle with yogurt sauce, and garnish with parsley.
