    • 2 tbsp soy sauce
    • 1/2 tsp dashi powder
    • 1 tsp grated ginger
    • 💧 180ml water

Cut the yellowtail into thirds, sprinkle with salt, let sit for 10 minutes, rinse lightly with water, and pat dry with paper towels.

Cut the daikon into quarters lengthwise, then slice into 7mm thick pieces.
