INGREDIENTES
Noodles
- 150g somen noodles
Meat
- 100g thinly sliced pork belly
Vegetables
- 茄子 2 eggplants (160g)
- 🧅 55g green onion
- 1 piece ginger
Oil
- 1 tbsp sesame oil
Seasoning
- 1 tbsp sake
- 1.5 tbsp mirin
- 🍬 1 tsp sugar
- 1.5 tbsp soy sauce
- 1/4 tsp dashi powder
- 💧 400ml water
Garnish
- 🧅 1 tbsp chopped green onion
- A pinch of white sesame seeds
PASOS
Cut the eggplants in half lengthwise, score the skin in a crosshatch pattern, and cut them into halves. Slice the green onion and grate the ginger.
Cut the pork belly into 3cm wide pieces.
Boil water in a pot, cook somen noodles according to package instructions, drain, rinse with cold water, and place in serving bowls.
Heat sesame oil in a pan over medium heat, cook pork until it changes color, then add eggplants skin-side down and cook for 2–3 minutes until browned. Add green onion, ginger, and the seasoning ingredients, then bring to a boil and simmer for 5 minutes.
Divide the cooked pork and eggplant mixture over the somen noodles, pour the remaining sauce evenly, garnish with chopped green onion and sesame seeds.
