INGREDIENTES
Vegetables
- 100g fresh okara
- 🥔 2 medium potatoes
Protein
- 🐟 1 can tuna
Condiments
- 2 tbsp mayonnaise
- 🧂 1/4 tsp salt
- Pinch of pepper
Breading
- 100cc breadcrumbs
- 1 tbsp olive oil
- Flour as needed
- 🥚 1 beaten egg
PASOS
Cut the potatoes into bite-sized pieces, soak in water, drain, and microwave in a heatproof container covered with plastic wrap for 6 minutes at 600W.
Mash the potatoes while hot, then mix with okara, tuna, mayonnaise, salt, and pepper. Divide into 8 portions and shape into balls.
Combine breadcrumbs and olive oil in a heatproof container, cover loosely with plastic wrap, and microwave for 3 minutes at 600W.
Coat the shaped balls in flour, then beaten egg, and finally the toasted breadcrumbs.
Place the coated croquettes on a baking sheet lined with parchment paper and bake in a toaster oven for about 10 minutes until golden brown.
