INGREDIENTES

- 🐙 100g boiled octopus
Legumes
- 🌰 100g dried chickpeas
Vegetables
- 🥒 1 cucumber
- 🧅 1/4 onion
- A pinch of chopped parsley
Dressing
- 🧂 A pinch of sugar
- 🧂 1/3 tsp salt
- A pinch of pepper
- 1 tbsp vinegar
- 2 tbsp olive oil
PASOS
Cut off both ends of the cucumber, slice diagonally, and chop into small pieces. Thinly slice the onion and soak in water to remove bitterness, then drain.
Cut the boiled octopus into bite-sized pieces.
In a bowl, mix the dressing ingredients (sugar, salt, pepper, vinegar, olive oil). Add cucumber, onion, octopus, and chickpeas, then toss to combine.
Serve the salad in a dish and sprinkle chopped parsley on top.
