INGREDIENTES
Pasta
- 🍝 150g penne
Meat
- 🐖 200g pork (for curry or stew)
Vegetables
- 🧅 1/2 onion, minced
- 🥕 1/2 carrot, minced
- 🍄 6 mushrooms, thinly sliced
- 🧄 1 clove garlic, minced
Seasoning
- 🧂 Salt and pepper to taste
- 🍃 1 bay leaf
- 1 tbsp olive oil
- 🌿 Chopped parsley for garnish
Sauce
- 🍷 3 tbsp red wine
- 🍅 200g canned diced tomatoes
- 💧 200ml water
- 🧂 1/2 tsp salt
- 🧂 Pepper to taste
PASOS
Season the pork with salt and pepper.
Mince the onion, carrot, and garlic. Thinly slice the mushrooms.
Heat olive oil and garlic in a pressure cooker over medium-low heat until fragrant. Add the pork and cook until browned.
Add onion, carrot, and mushrooms to the cooker. Stir until coated with oil.
Add bay leaf, red wine, canned tomatoes, water, salt, and pepper. Mix well, cover, and cook under pressure for 20 minutes.
Release pressure naturally, remove the pork, and shred it. Return the pork to the cooker and simmer until the sauce reduces by 1/3.
Cook the penne according to package instructions. Drain well.
Serve the penne topped with the meat sauce and garnish with parsley.
