INGREDIENTES
Main Ingredients
- 200g sliced pork
- 150g lotus root
- 1 king oyster mushroom (40g)
- 1 tbsp salad oil
- Pinch of salt and pepper
Plum Miso Sauce
- 1 plum, pitted and mashed
- 1 tbsp sake
- 2 tbsp mirin
- 1 tbsp miso
PASOS
Cut the lotus root in half lengthwise, then slice into thin half-moon shapes (5mm thick). Soak in water and drain. Slice the king oyster mushroom in half horizontally, then thinly slice vertically. Pit and mash the plum.
Season the pork with a pinch of salt and pepper.
Mix the plum miso sauce ingredients (plum, sake, mirin, miso) in a bowl.
Heat salad oil in a frying pan over medium heat. Add the pork and stir-fry until the color changes. Add lotus root and king oyster mushroom, and stir-fry until softened. Add the plum miso sauce and stir-fry to combine.
