INGREDIENTES
Essential Ingredients
- 300g pork belly
- 500g aged kimchi
- 500ml anchovy kelp stock
- 🧅 1/6 onion
- 1/2 stalk green onion
- 1 green chili pepper
Pork Belly Seasoning
- 🧄 1 tbsp minced garlic
- a pinch of minced ginger
- 1 tbsp cooking wine
- a pinch of black pepper
Stew Seasoning
- 1 tbsp gochujang (Korean chili paste)
- 1/2 tbsp soy sauce
- 2 tbsp chili powder
- 1 tbsp sugar
- 1 tbsp cooking wine
- 🧄 1/2 tbsp minced garlic
- a pinch of minced ginger
- 5 tbsp kimchi juice
PASOS
Marinate the pork belly with the pork belly seasoning ingredients for about 20 minutes.
Remove the filling from the aged kimchi and wrap the marinated pork belly inside, rolling tightly.
Prepare the stew seasoning by mixing all the ingredients together.
Slice the onion thickly, and cut the green onion and chili pepper diagonally.
Place the pork belly kimchi rolls in a pot, add the stock, and bring to a boil over high heat.
Reduce the heat, add the stew seasoning, and simmer for about 15 minutes with the lid on.
Add the sliced vegetables and cook until the pork is fully tender and the vegetables are done.
