INGREDIENTES
Meat
- 200g thinly sliced pork loin
Vegetables
- 🍆 2 eggplants (160g), trimmed and sliced
Condiments
- 1 plum, pitted and mashed
- 🧂 Pinch of salt and pepper
- Cornstarch, as needed
- 1 tbsp salad oil
Sauce
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 1 tsp sugar
- 1 tbsp soy sauce
- 1 tsp grated ginger
PASOS
Trim and slice the eggplants lengthwise. Pit the plum and mash it into a paste.
Make small cuts in the pork loin to prevent curling. Season with salt and pepper, then coat both sides with cornstarch.
Mix sake, mirin, sugar, soy sauce, and grated ginger in a bowl. Add the mashed plum to create the plum ginger sauce.
Heat half the salad oil in a pan over medium heat. Cook the eggplants for 2 minutes on each side until golden brown, then remove.
Add the remaining salad oil to the pan and cook the pork for 2 minutes on each side until browned and cooked through.
Return the eggplants to the pan and pour in the plum ginger sauce. Stir to coat evenly.
