INGREDIENTES

- 4 slices bacon
Vegetables
- 🎃 200g pumpkin, seeds removed
- 🧅 1/4 onion, minced
- 🥒 1/2 cucumber, thinly sliced
Seasoning
- 🧂 1/3 tsp salt
- 3 tbsp mayonnaise
- Pinch of salt and pepper
PASOS
Cut bacon into 1cm squares.
Dice pumpkin into 2cm chunks.
Mince onion and thinly slice cucumber. Place in a bowl, sprinkle with salt, and let sit for 10 minutes. Squeeze out excess water.
Place pumpkin and bacon in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 3–4 minutes.
Combine pumpkin, bacon, onion, cucumber, mayonnaise, and salt and pepper in a bowl. Mix well.
