INGREDIENTES
Rice
- 🍚 2 bowls (300g) cooked white rice
Saba Miso Tofu
- 1 can (190g) miso-flavored saba
- 🧈 1 block (250g) grilled tofu
- 1/3 bunch shungiku
- 🍄 1/2 pack enoki mushrooms
- 🧅 1/4 stalk green onion
Saba Miso Tofu Seasoning
- 2 tbsp sake
- 1 tbsp mirin
- 🍬 1 tsp sugar
- 🧂 1 tsp soy sauce
- 💧 150ml water
Tomato Garlic Soy Sauce Mix
- 🍅 1 tomato
- 🧅 1/2 onion
Garlic Soy Sauce Dressing
- 2 tsp vinegar
- 🧂 2 tsp soy sauce
- 1 tbsp sesame oil
- 🧄 1 tsp grated garlic
Steamed Sweet Potato with Yuzu Pepper
- 🍠 1/3 sweet potato (250g)
- 1/2 tsp yuzu pepper
- A pinch of aonori
PASOS
Cut sweet potato into bite-sized pieces and soak in water for 10 minutes.
Separate saba can contents into fish and juice.
Prepare vegetables: cut shungiku, enoki, and green onion into manageable sizes. Cut tofu into bite-sized pieces.
Slice tomato and onion; soak onion slices in water and drain.
Mix garlic soy sauce dressing ingredients in a bowl, then toss with tomato and onion.
Drain sweet potato, mix with yuzu pepper, and microwave for 5 minutes at 600W.
Heat reserved saba juice with seasoning ingredients in a pot. Add tofu, enoki, and green onion, cover, and simmer for 5 minutes.
Mix cooked sweet potato with aonori.
Add saba and shungiku to the pot and simmer for 2 minutes. Plate and serve.
