INGREDIENTES
Pasta
- 🍝 170g spaghetti (1.6mm thickness)
Protein
- 🐟 200g salmon fillet, cut into pieces
Vegetables
- 🥔 150g potato, diced into 1cm cubes
- 5 green beans, trimmed and cut into 2cm pieces
Seasoning
- 🧂 Pinch of salt and pepper
- 🧂 Salt to taste
Oil
- 1 tbsp olive oil
- Olive oil for finishing
Sauce
- 100g Genovese pesto sauce
Liquid
- 50cc reserved pasta cooking water
PASOS
Cut the salmon into bite-sized pieces and season with salt and pepper.
Dice the potato into 1cm cubes and soak in water to remove excess starch. Trim and cut green beans into 2cm pieces.
Boil water in a pot, add salt, and cook spaghetti according to package instructions.
Heat olive oil in a frying pan, cook salmon pieces over medium heat until the surface changes color, then remove from the pan.
Add diced potatoes to the boiling pasta water 3 minutes before the pasta is done, and green beans 1 minute before. Reserve 50cc of pasta water and drain the rest.
Remove the pot from heat, mix the cooked pasta, salmon, Genovese pesto sauce, and reserved pasta water together.
