INGREDIENTES
Main
- 220g filleted sanma (2 pieces)
- 100g maitake mushrooms
- 70g sliced lotus root
- 🧂 A pinch of salt
- A pinch of sansho pepper
- 1/2 tbsp salad oil
- 1/2 tbsp potato starch
Garnish
- 🍋 2 wedges of lemon
PASOS
Separate maitake mushrooms into small clusters. Slice lotus root into 7mm pieces and soak in water, then drain.
Cut sanma into bite-sized pieces. Sprinkle with salt and sansho pepper, then lightly coat with potato starch.
Arrange maitake and lotus root in a frying pan over medium heat. Cook until golden and remove as they finish cooking.
Heat salad oil in the pan. Place sanma skin-side down and pan-fry for 4–5 minutes on medium heat until both sides are golden.
Plate the sanma, maitake, and lotus root. Garnish with lemon wedges.
