    • Pinch of pepper

Prepare shimeji mushrooms by cutting off the root and separating them. Halve the mini tomatoes. Finely chop the onion and garlic.

Peel and halve the satoimo. Rub with 1/2 tsp salt (not listed) and rinse. Microwave the satoimo for 3 minutes at 600W, then drain. Mash roughly with a fork and season with salt and pepper.

Heat olive oil in a pan and sauté onion and garlic over medium heat until softened, about 2 minutes.

Add ground meat to the pan and cook until browned. Stir in shimeji mushrooms and cook until coated in oil.

Add sauce ingredients (tomato juice, ketchup, Worcestershire sauce, consomme, salt, pepper) and bring to a boil. Cover and simmer on low heat for 5 minutes. Remove the lid and cook until the sauce thickens.

Layer mashed satoimo in a baking dish, followed by the meat sauce. Top with pizza cheese and mini tomatoes.

Bake in a toaster oven for about 8 minutes until the cheese is golden brown. Garnish with parsley.
