INGREDIENTES
Seafood
- 🦪 8 baby scallops (80g)
Vegetables
- 🧅 10cm green onion, sliced
- 4cm lotus root, diced
Dry Ingredients
- 2 tsp all-purpose flour
- 2 tbsp potato starch
- 3 tbsp all-purpose flour
- 🧂 1/3 tsp salt
Liquid
- 💧 80cc water
Oil
- Enough salad oil for frying
PASOS
Slice the green onion diagonally. Dice the lotus root and soak in water for 5 minutes, then drain.
Place scallops, green onion, lotus root, and 2 tsp flour into a plastic bag. Shake to coat the ingredients evenly with flour.
In a bowl, mix salt, potato starch, flour, and water to create the batter.
Add the scallops, green onion, and lotus root to the batter and mix lightly.
Heat 2cm of salad oil in a frying pan to 170°C. Fry 1/4 of the mixture at a time until golden brown.
