    • 1 1/2 tbsp soy sauce

Cut the daikon into 1.5cm thick slices, peel the skin thickly, and cut each slice in half vertically. Pat the atsuage dry with a paper towel and cut it into halves vertically, then into quarters horizontally.

Place the atsuage, daikon, and all seasonings except soy sauce into a pot. Heat over medium heat until boiling, then cover and simmer on low heat for 10 minutes.

Remove the lid, add soy sauce, and simmer over medium heat for an additional 5 minutes.
