    • 1 tsp sesame oil

    • 2 tbsp mirin
    • 1 1/2 tbsp soy sauce
    • 50 ml water

Tear the konjac into bite-sized pieces using a spoon.

Trim excess fat and tendons from the chicken thigh and cut into bite-sized pieces.

Place the konjac in a pot with enough water to cover it. Heat over medium heat until boiling, then simmer for 2–3 minutes. Drain the water.

Wipe the pot dry with a paper towel. Add sesame oil and heat over medium heat. Add the chicken and sauté for 1–2 minutes until the color changes.

Add the konjac and stir until coated with oil. Mix in the seasonings (sake, mirin, soy sauce, and water). Bring to a boil, cover, and simmer over low heat for 7–8 minutes.

Remove the lid and simmer over medium heat until the sauce reduces to half its volume.
