    • 10cm daikon (300g), grated
    • 1/4 pack kaiware sprouts
  • Seasoning

    • 🧂 1/3 tsp salt
    • 1 tbsp sake
    • 2 tbsp mirin
    • 1 tbsp soy sauce
    • 1/2 tsp grated ginger
    • 200cc water

Grate the daikon and lightly drain the excess water. Reserve a small amount for topping. Cut the kaiware sprouts in half.

Cut the mackerel fillets in half. Sprinkle with salt and let sit for 5 minutes. Pat dry with kitchen paper.

In a frying pan, mix the seasoning ingredients (sake, mirin, soy sauce, ginger, and water) and bring to a boil over medium heat. Place the mackerel skin-side up and spoon the sauce over the fish until the color changes.

Cover with a drop lid and simmer on low heat for 8 minutes.

Add the grated daikon and simmer for another 2–3 minutes over medium heat.
