INGREDIENTES

- 🦑 1 squid (200g)
Vegetables
- 150g cooked taro
- 200g daikon radish
Broth
- 💧 200cc water
- 2 tbsp sake
- 2 tbsp mirin
- 1.5 tbsp soy sauce
- 1/3 tsp dashi granules
- 2 slices ginger
PASOS
Clean the squid by removing the innards, cartilage, and cutting the tentacles. Slice the body into 1cm rings and cut the tentacles into bite-sized pieces.
Peel the daikon radish thickly and cut it into quarters lengthwise, then slice into 3cm pieces.
In a pot, bring the broth ingredients (water, sake, mirin, soy sauce, dashi, and ginger) to a boil. Add the squid and simmer for 3–4 minutes until the color changes. Remove the squid.
Add the daikon and taro to the broth, bring to a boil, cover, and simmer on low heat for 15 minutes.
Return the squid to the pot and simmer until warmed through.
