INGREDIENTES
Protein
- 🍗 100g of cooked chicken breast
- 🥚 2 eggs
Vegetables
- 🍄 1 shiitake mushroom
- 🧅 1/2 stalk of green onion
- 🧅 1/2 onion
Condiments
- 3 tbsp soy sauce
- 1/2 tsp sugar
Broth
- 2 pieces of kombu
- A pinch of katsuobushi
PASOS
Prepare dashi broth by boiling kombu for 5-10 minutes, then steep katsuobushi for 3 minutes. Strain and set aside.
Slice onion thinly, and shiitake mushroom into desired shapes. Cut cooked chicken breast into bite-sized pieces.
Lightly beat eggs in a bowl, keeping yolks partially intact for a restaurant-style appearance.
Heat a small frying pan with a bit of oil, sauté onion and shiitake mushroom until onion becomes translucent.
Add chicken breast to the pan and stir-fry gently. If using raw chicken, marinate beforehand and cook thoroughly.
Pour dashi broth, soy sauce, and sugar into the pan. Simmer until the mixture reduces and flavors meld.
Pour beaten eggs over the mixture, add green onion, cover, and cook on low heat until eggs are partially set (2-3 minutes).
Serve over prepared rice, carefully transferring the mixture to preserve presentation.
