INGREDIENTES
Main
- 20g vermicelli
- 100g bok choy
- 150ml unsweetened soy milk
- 1 tbsp miso
- A dash of chili oil
Soup Base
- 200ml water
- 1/2 tsp chicken stock powder
- A dash of pepper
PASOS
Prepare the bok choy by washing and chopping into bite-sized pieces.
Soak the vermicelli in warm water for 5 minutes, then drain.
In a pot, combine water, chicken stock powder, and pepper. Bring to a boil.
Add bok choy and cook for 2–3 minutes until tender.
Lower the heat and stir in soy milk and miso until well combined.
Add the soaked vermicelli and cook for another 2 minutes.
Serve hot and drizzle chili oil on top according to taste.
