INGREDIENTES
Main Ingredients
- 200g chicken liver
- 1 bunch (200g) rapeseed greens
- 🧅 1/2 onion, sliced
- 🧄 1 clove garlic, sliced
- 1 chili, halved and deseeded
- 1 tbsp potato starch
- 1 tbsp vegetable oil
Marinade
- 1 tsp grated ginger
- 1 tbsp sake
- 1/2 tbsp soy sauce
Seasoning
- 1 tbsp sake
- 🍬 1 tsp sugar
- 1 tbsp soy sauce
PASOS
Trim the hard ends of the rapeseed greens, cut them in half, and slice the thicker stems lengthwise. Slice the onion thinly. Halve the chili and remove the seeds. Slice the garlic and remove the core.
Remove fat from the chicken liver and cut it into bite-sized pieces. Soak in cold water for 5 minutes, then drain. Mix the liver with the marinade ingredients and let it sit for 10 minutes. Pat dry and coat with potato starch.
Heat vegetable oil in a pan over low heat. Add garlic and chili, cooking until fragrant. Add onion and rapeseed greens, stir-frying over medium heat until softened. Remove and set aside.
In the same pan, add the coated liver and stir-fry over medium heat for 3 minutes, flipping occasionally until cooked through. Return the onion and greens to the pan, add the seasoning ingredients, and stir-fry to combine.
