INGREDIENTES

- 🥚 2 eggs
- 2 king oyster mushrooms (80g)
- 🧅 1/2 green onion (80g)
Seasonings
- 🧂 a pinch of salt
- 1 tbsp mayonnaise
- 1/2 tbsp salad oil
- 1 tbsp sake
- 🍬 1/2 tsp sugar
- 🧂 a pinch of salt and pepper
- 1/2 tbsp soy sauce
PASOS
Cut the king oyster mushrooms in half lengthwise, then cut them into thirds vertically. Slice the green onion diagonally into 5mm pieces.
In a bowl, crack the eggs and mix them with mayonnaise and a pinch of salt to create the egg mixture.
Heat salad oil in a frying pan over medium heat. Stir-fry the king oyster mushrooms and green onions for about 2 minutes until softened. Add the seasonings (sake, sugar, salt and pepper, soy sauce) and stir-fry for another 30 seconds.
Pour the egg mixture into the pan and stir gently until the eggs are semi-cooked and combined with the vegetables.
