INGREDIENTES

- 1/4 kabocha squash, sliced thinly
- 1 pack shimeji mushrooms
Condiments
- 1 tbsp olive oil
- 1 tsp soy sauce
- 1 tsp anchovy paste
PASOS
Remove seeds and pulp from the kabocha squash, peel the skin, and slice thinly. Separate shimeji mushrooms by hand after cutting off the root ends.
Heat olive oil in a frying pan over medium heat. Add shimeji mushrooms and stir-fry until softened.
Add kabocha squash slices to the pan and stir-fry briefly. Add soy sauce and anchovy paste, mixing well.
