PASOS
Slice the onion into thin strips and chop the green onion into 1cm pieces.
Marinate the pork belly with salt, mirin, and soy sauce for 10–20 minutes.
Heat vegetable oil in a pan over low heat, add green onion, and stir-fry until slightly golden.
Add marinated pork belly and stir-fry over medium heat for 3–4 minutes until the fat renders and the pork is golden.
Add sliced onion and stir-fry until softened.
Add stir-fry seasoning (sugar, soy sauce, mirin, salt) and mix well over high heat for 1 minute.
Add cooked rice and stir-fry for 1–2 minutes, breaking up clumps.
Let the rice sit over medium heat for 30 seconds to create a slightly crispy texture.
Prepare the sauce by combining sugar, soy sauce, mirin, and water. Simmer for 20–30 seconds.
Serve the stir-fried rice in a bowl, top with scrambled egg, and drizzle the sauce over.
