INGREDIENTES

- 🥩 1 steak of Angus beef shoulder roast
- 🍄 2 large king oyster mushrooms (80g)
- 🌿 A pinch of parsley
- 🧂 A pinch of salt and pepper
- 🧄 1 tsp minced garlic
Side Dish
- 🥔 2 small potatoes (240g)
- 🧂 A pinch of salt and pepper
- 2 tbsp olive oil
Sauce
- 2 tbsp sake
- 2 tbsp soy sauce
- 🍬 1.5 tbsp sugar
PASOS
Trim the hard root of the king oyster mushrooms and cut them into quarters or halves depending on size.
Wash the potatoes thoroughly and cut them into wedges. Soak in water, then pat dry. Toss with salt, pepper, and olive oil in a bowl.
Tenderize the beef by scoring the connective tissue and piercing with a fork. Flatten to 8mm thickness using a mallet.
Spread garlic on the beef, season with salt and pepper, and roll tightly with king oyster mushrooms placed at the edge. Secure with kitchen twine.
Place the potatoes and beef on a foil-lined baking tray. Roast in a preheated oven at 200°C for 15 minutes, flip the beef, and roast for another 15 minutes.
Wrap the beef in foil and let it rest for 10 minutes.
Heat the sauce ingredients in a pan over medium heat until slightly thickened. Add the beef juices and mix well.
Plate the potatoes and beef, drizzle with sauce, and garnish with parsley.
