    • 🍠 1/2 piece (90g) sweet potato
    • 🧅 1 piece (165g) green onion
  • Seasoning

    • 1 tbsp potato starch
    • 1 tbsp sesame oil
    • 1 tbsp mirin
    • 2 tbsp sushi vinegar
    • 🌰 1 tbsp white sesame seeds

Cut the sweet potato into bite-sized pieces, soak in water, and drain. Place in a microwave-safe container, add 1 tbsp of water, cover loosely with plastic wrap, and microwave at 600W for 3 minutes. Drain the water. Cut the green onion into 2cm pieces.

Cut the chicken into bite-sized pieces and coat with potato starch.

Heat sesame oil in a frying pan over medium heat. Place the chicken skin-side down and cook until golden brown. Flip and cook until fully cooked through.

Add the green onion and sweet potato to the pan. Stir-fry over medium-low heat until the green onion softens. Add mirin and sushi vinegar, stirring until the sauce thickens. Turn off the heat and mix in the white sesame seeds.
