    • 60cc (4 tbsp) sweet sake
    • 1 tsp grated ginger
    • 1/2 tbsp salad oil

Pierce the chicken skin with a fork in several places, flip it over, and make shallow vertical cuts along the length.

Mix miso, sweet sake, and ginger in a plastic bag. Add the chicken, remove air, seal the bag, and massage the marinade into the chicken. Refrigerate overnight.

Heat salad oil in a frying pan. Place the chicken skin-side down and cook until browned. Flip, cover with a lid, and cook on low heat for 6–7 minutes. Remove from the pan.

Add the leftover marinade from the plastic bag to the frying pan. Simmer over medium heat for about 2 minutes until thickened.

Slice the chicken into bite-sized pieces, plate it, and drizzle with the sweet miso sauce. Serve with mizuna and cherry tomato.
