    • 🍶 200g firm tofu
    • 🍅 1/2 tomato, sliced
    • 🥒 1/2 cucumber, julienned
    • 🧂 1/3 tsp salt
    • 1 tbsp sake
  • Sauce

    • 🧅 5cm green onion, minced
    • 1/2 piece ginger, minced
    • 2 tbsp white sesame seeds
    • 🍬 1 tsp sugar
    • 1 tbsp vinegar
    • 1 tbsp soy sauce
    • 1 tbsp chicken broth

Make vertical cuts in the chicken thigh and sprinkle with salt. Let it sit for 10 minutes, then pat dry with paper towels.

Cut the tofu into 1.5cm slices and wrap in paper towels to remove excess water. Slice the tomato thinly and julienne the cucumber. Mince the green onion and ginger.

In a pot, add 400ml water, sake, and the chicken. Bring to a boil, skim off any foam, and simmer on low heat for 10 minutes. Reserve 1 tbsp of the broth.

Mix all sauce ingredients except the broth in a bowl. Add the reserved broth and mix well to create the Bang Bang sauce.

Slice the cooked chicken into bite-sized pieces. Arrange the tomato, tofu, cucumber, and chicken on a plate, then drizzle with the sauce.
