INGREDIENTES
Noodles
- 2 frozen udon noodles
Egg
- 🥚 2 beaten eggs
Seafood
- 40g boiled shirasu
Vegetables
- 🧅 110g green onion, sliced
Condiments
- 1 red shiso pickled plum
- 1 tsp salad oil
Seasonings
- 2 tbsp mirin
- 🧂 1/3 tsp salt
- 1/3 tsp Japanese dashi granules
- 💧 600ml water
Thickening Agent
- 1 tbsp potato starch
- 💧 1 tbsp water
PASOS
Slice the green onion and sauté in salad oil until fragrant and softened.
In a pot, combine water, mirin, salt, and dashi granules. Bring to a boil.
Add the frozen udon noodles to the boiling broth and cook until softened.
Mix potato starch and water to create a slurry. Gradually add to the broth while stirring to thicken.
Pour the beaten eggs into the pot in a circular motion. Let them set slightly before stirring.
Serve the udon in bowls and top with shirasu, sliced green onion, and the pickled plum.
