INGREDIENTES
Meat
- 200g pork loin shabu-shabu slices
Vegetables
- 150g firm tofu, cut into 4 pieces
- 100g fresh wakame, washed and cut
- 100g enoki mushrooms, trimmed and separated
- 100g shimeji mushrooms, trimmed and separated
- 🥕 50g carrot, peeled and thinly sliced
Condiments
- Ponzu sauce, as needed
Seasonings
- 600cc water
- 1 tbsp sake
- 🧂 1/2 tsp salt
- 1/2 tsp Japanese dashi powder
PASOS
Prepare the vegetables: trim and separate enoki and shimeji mushrooms, peel and thinly slice the carrot, wash and cut wakame into bite-sized pieces, and cut tofu into 4 pieces.
In a pot, combine water, sake, salt, and dashi powder. Heat over medium heat until boiling, then add tofu, enoki, shimeji, and carrot. Cover and simmer on low-medium heat for 5 minutes until vegetables are tender.
Dip wakame and pork slices one by one into the broth to cook them briefly.
Serve with ponzu sauce on the side.
