INGREDIENTES

- 🍚 2 bowls cooked rice (400g)
- 🦑 200g sashimi-grade squid
- 1 piece mentaiko (30g)
- 2 shiso leaves
- 1/4 tsp yuzu kosho

- 🌾 1/2 tsp white sesame seeds
- 🥚 2 quail egg yolks
- Soy sauce to taste
PASOS
Thinly slice the shiso leaves. Cut open the mentaiko and scrape out the roe with a spoon.
Prepare the squid by removing the innards and cartilage. Clean the tentacles and body in salted water.
Pat the squid dry, remove the skin, and slice the body thinly. Cut the tentacles into bite-sized pieces.
Mix the squid, mentaiko, and yuzu kosho in a bowl until evenly combined.
Divide the rice into bowls, sprinkle white sesame seeds, and top with the squid mixture, shiso, quail egg yolks, and soy sauce.
