INGRÉDIENTS
Fish
- 160g amberjack (3 slices)
Vegetables
- 4 myoga
- 160g eggplant (2 pieces)
Seasoning
- 🧂 Pinch of salt and pepper
- 1 tbsp potato starch
- Enough salad oil for frying
Nanban Sauce
- 3 tbsp vinegar base
- 2 tbsp soy sauce
- 💧 100cc water
- 1/2 tsp sliced chili
ÉTAPES
Cut the myoga in half lengthwise. Mix the Nanban sauce ingredients in a bowl and marinate the myoga for 15 minutes.
Trim the eggplant, cut it in half lengthwise, score the skin shallowly, and cut each half into two pieces.
Cut the amberjack into bite-sized pieces. Season both sides with salt and pepper, then lightly coat with potato starch.
Heat salad oil in a frying pan to about 1cm depth over medium heat. Fry the eggplant until golden brown on both sides (about 3 minutes), then remove. Fry the amberjack until cooked through and remove.
Add the fried eggplant and amberjack to the Nanban sauce and mix well. Marinate for 10–15 minutes.
