INGRÉDIENTS
Main Ingredients
- 2 pieces grilled anago (80g)
- 🥒 1 cucumber
- 3 shiso leaves
- 1/2 piece ginger
Seasonings
- 🧂 1/3 tsp salt
- 1/2 tbsp white sesame seeds
- 🍬 1/2 tbsp sugar
- 2 tbsp vinegar
- 1/2 tbsp soy sauce
- 💧 1/2 tbsp water
ÉTAPES
Cut the cucumber into slices, mix with salt in a bowl, let sit for 10 minutes, rinse with water, and squeeze out excess moisture. Julienne the ginger and soak in water, then drain. Cut the shiso leaves into thin strips.
Cut the grilled anago into 1cm wide pieces, removing the head and tail.
Mix the seasoning ingredients (sugar, vinegar, soy sauce, and water) in a bowl.
Add the grilled anago, cucumber, shiso leaves, and white sesame seeds to the bowl with the mixed seasonings and toss gently.
Plate the dish and garnish with julienned ginger.
