INGRÉDIENTS
Apple Filling
- 🍎 100g peeled and diced apple
- 🧂 10-15g sugar
- A pinch of cinnamon powder
Cookie Dough
- 🧈 60g unsalted butter
- 🧂 40g sugar
- 🥚 1 egg yolk
- 1/4 tsp vanilla extract
- 110g cake flour
- 🌰 10g almond flour
ÉTAPES
Peel and dice the apple into 0.5cm cubes.
Mix the apple, sugar, and cinnamon powder in a heatproof bowl.
Cover the bowl with plastic wrap and poke holes using a toothpick.
Microwave the mixture at 600W for 5 minutes.
After microwaving, stir the mixture again and refrigerate until ready to use.
Cream the softened butter and sugar in a bowl.
Add the egg yolk and vanilla extract, mixing thoroughly.
Add all the dry ingredients and mix with a spatula until just combined.
Wrap the dough in plastic wrap and refrigerate for 30 minutes.
Roll out the dough to a thickness of 0.3cm.
Cut out circles using a 6cm cookie cutter.
Place 1 tsp of apple filling onto each cookie base.
Cover with another cookie circle and press the edges to seal.
Crimp the edges with a fork for decoration and sealing.
Bake at 170°C for 12 minutes.
Cool the cookies completely before handling.
