INGRÉDIENTS
Meat
- 🥓 2 slices bacon
Vegetables
- 🌱 3 asparagus spears (60g)
- 🧅 1/4 onion (50g), minced
Dairy
- 🧈 10g salted butter
- 🥛 300ml milk
Dry Ingredients
- 1/2 tbsp all-purpose flour
Seasonings
- 1/3 tsp consomme
- 🧂 1/3 tsp salt
- Pinch of pepper
- 💧 100ml water
ÉTAPES
Trim the tough ends of the asparagus and peel the lower half with a peeler. Slice diagonally into 1cm pieces. Mince the onion.
Cut the bacon into 1cm wide strips.
Heat butter in a pot over medium heat. Add the bacon and sauté briefly. Add the onion and cook until translucent.
Sprinkle in the flour and stir until no dry flour remains. Add the seasonings (consomme, salt, pepper, water) and bring to a boil. Cover and simmer on low heat for 5 minutes until thickened. Add the asparagus, cover again, and cook for another 2 minutes until tender.
Gradually add the milk, stirring constantly. Heat over medium heat, stirring, until the soup thickens.
