INGRÉDIENTS
Protein
- 100g sliced pork
- 🦐 6 headless shrimp (90g)
Vegetables
- 2 cabbage leaves (160g)
- 🥕 1/4 carrot
- 50g boiled bamboo shoots
- 2 baby corns
- 4 snow peas
- 🧄 1 clove garlic
- 1 piece ginger
- 5g dried wood ear mushrooms
Oils
- 1 tsp sesame oil
- 1 tbsp salad oil
Shrimp Marinade
- 🥚 1/2 egg white
- 1 tbsp sake
- 🧂 Pinch of salt and pepper
- 1/2 tbsp salad oil
Pork Marinade
- 1 tsp sake
- 1 tsp soy sauce
Blanching
- 1000cc water
- 🧂 1 tsp salt
- 2 tbsp salad oil
Sauce
- 1 tbsp sake
- 1 tsp sugar
- 1 tbsp soy sauce
- 1/2 tsp chicken broth powder
- 🧂 Pinch of salt and pepper
- 1/2 tbsp cornstarch
- 100cc water
ÉTAPES
Soak dried wood ear mushrooms in water and cut into bite-sized pieces. Slice cabbage, carrot, bamboo shoots, and baby corn. Remove strings from snow peas and cut diagonally. Mince garlic and ginger.
Peel and devein shrimp. Rinse and pat dry. Marinate with egg white, sake, salt, pepper, and salad oil.
Marinate pork with sake and soy sauce for 10 minutes.
Mix all sauce ingredients in a bowl.
Blanch vegetables in boiling water with salt and salad oil. Cook snow peas briefly, then carrots, bamboo shoots, baby corn, cabbage, and wood ear mushrooms.
Heat salad oil in a pan, sauté garlic and ginger until fragrant. Add pork and shrimp, cooking until their colors change.
Add blanched vegetables to the pan and stir-fry. Pour in the sauce and cook until thickened. Add snow peas and drizzle sesame oil.
