Place the azuki beans in a pot and add enough water to cover them generously. Heat over medium heat until boiling, then simmer for 2 minutes. Drain the beans.

Return the azuki beans to the pot, add 1000cc water, and heat over medium heat. Once boiling, reduce to low heat, cover, and simmer for 30–40 minutes until the beans are tender.

Add sugar and gently stir. Cover and simmer for 15–20 minutes. Add salt and continue stirring gently until the desired consistency is achieved. Skim off any foam.

Line a toaster tray with aluminum foil and lightly coat with salad oil. Place the mochi on the tray and toast for 5–8 minutes until puffed and golden.
