INGRÉDIENTS
Main
- 🐟 2 pieces flounder fillet (260g)
- 2 pieces ginger
Seasoning
- 3 tbsp sake
- 2 tbsp mirin
- 🍬 1 tbsp sugar
- 2 tbsp soy sauce
- 💧 200 ml water
ÉTAPES
Make shallow cross cuts on the skin side of the flounder fillets.
Peel one piece of ginger and julienne it for garnish. Slice the other piece thinly with the skin on.
In a pan, combine the seasoning ingredients (sake, mirin, sugar, soy sauce, water) and sliced ginger. Heat over medium heat until simmering, then add the flounder fillets skin-side up.
Cover with a drop lid and simmer on low heat for 15 minutes, occasionally spooning the broth over the fillets.
Remove the drop lid and continue spooning broth over the fillets for another 5 minutes.
Plate the fillets and garnish with julienned ginger.
