Base
- 🍚 2 bowls (400g) warm rice
Protein
- 🐖 80g minced pork
Vegetables
- 🌱 1/2 pack bean sprouts
- 🌱 1/2 pack pea shoots
Aromatics
- 🧄 1 clove minced garlic
- 1 piece minced ginger
Condiments
- 1 tbsp sesame oil
- 🥚 2 soft-boiled eggs
Sauce
- 1 tbsp sake
- 2 tbsp miso
- 🍬 1 tbsp sugar
- 1–2 tsp chili bean paste
Thickener
- 1 tbsp cornstarch
- 💧 2 tbsp water
ÉTAPES
Cut the roots off the pea shoots and halve their length. Mince the garlic and ginger.
Mix the sauce ingredients (sake, miso, sugar, chili bean paste) in a bowl.
Heat sesame oil in a pan over low heat, add garlic and ginger, and cook until fragrant. Add minced pork and stir-fry over medium heat until the pork changes color.
Add the sauce mixture, then stir-fry. Add the pea shoots and bean sprouts, and cook until softened. Add the cornstarch slurry and stir until thickened.
Serve the rice in bowls, top with the stir-fried mixture, and place a soft-boiled egg in the center.
