Soak kombu in 200g water for 30 minutes, then remove the kombu.

Prepare the beef by slicing it into shorter pieces if necessary. Beat the eggs and set aside. Slice the onion and green onion, and separate the enoki mushrooms into smaller clusters.

Combine the kombu-soaked water, soy sauce, sugar, mirin, ginger wine, and sliced onion in a pot. Cook over medium-low heat until the onion is 2/3 cooked.

Add the beef to the pot and cook until it turns dark brown. Then add the enoki mushrooms and green onion, spreading them evenly. Skim off any foam that appears.

Pour the beaten eggs in a circular motion over the ingredients. Let the broth simmer until the eggs are fully cooked. Remove from heat.
