Scrape the skin off the burdock root with the back of a knife, slice it thinly at an angle, and soak in water. Drain well. Julienne the ginger.

Boil shirataki noodles in a pot with enough water to cover them for about 3 minutes. Drain and let cool. Cut into manageable lengths.

Heat salad oil in a frying pan over medium heat. Add beef and stir-fry until the color changes. Add burdock and shirataki, and stir briefly. Add the seasonings and ginger, mix well, and bring to a boil. Cover and simmer on low heat for 7–8 minutes until the burdock softens. Remove the lid and cook over medium heat for 3 minutes, stirring to reduce the sauce.
