INGRÉDIENTS
Main
- 160g beef steak cuts
- 🥚 2 1/2 eggs
- 🧅 1 green onion
- 🧂 Pinch of salt and pepper
- As needed vegetable oil
Batter
- As needed all-purpose flour
- 🥚 1/2 egg for batter
- 1 cup breadcrumbs
Seasoning
- 1 tbsp sake
- 1 tbsp mirin
- 1 tsp sugar
- 1 1/2 tbsp soy sauce
- 150ml water
Garnish
- As needed chopped green onion
ÉTAPES
Bring beef to room temperature for 10 minutes, trim tendons, and season with salt and pepper.
Slice green onion diagonally into thin pieces.
Crack 3 eggs into a bowl and mix. Reserve 1/2 egg for batter preparation.
Coat beef in flour, then dip in the reserved beaten egg, and finally cover with breadcrumbs.
Heat vegetable oil in a pot to 180°C and fry the beef for about 1 minute until golden brown. Slice into 7mm pieces while hot.
In a small frying pan, heat the seasoning ingredients over medium heat until boiling. Add green onion and cook until softened. Pour in the remaining 2 1/2 eggs and cook until partially set. Arrange beef slices on top, cover, and let steam off heat until eggs reach desired doneness.
Serve on a plate and garnish with chopped green onion.
