INGRÉDIENTS
Meat
- 150g beef heart
Vegetables
- 125g konjac, sliced
- 8 shishito peppers
- 2 slices ginger
Oil
- 1/2 tbsp sesame oil
Seasoning
- 50cc water
- 1 tbsp sake
- 1 tbsp mirin
- 1/2 tbsp sugar
- 1 1/2 tbsp soy sauce
ÉTAPES
Slice the beef heart thinly using a slanted knife technique, rinse under running water, and pat dry.
Rub konjac with 1 tsp salt, rinse, and pat dry. Score both sides with shallow 2mm cuts and cut into bite-sized pieces.
Trim the ends of the shishito peppers and julienne the ginger.
Dry roast the konjac in a frying pan over medium heat for 3 minutes to remove excess moisture. Add sesame oil and beef heart, stir-fry until the meat changes color.
Add the seasoning ingredients, ginger, and shishito peppers. Mix well and bring to a boil. Simmer for about 8 minutes, stirring occasionally, until the liquid is absorbed.
