INGRÉDIENTS
Noodles
- 2 servings of boiled udon noodles
Meat
- 150g sliced beef belly
Vegetables
- 1/2 stalk green onion, sliced
- 2 shiitake mushrooms, sliced
Seasonings
- 1/2 tbsp sesame oil
- 🧄 1 tsp grated garlic
- 1 tbsp gochujang
- 1 tbsp ground sesame seeds
Soup Base
- 600ml water
- 1 tbsp sake
- 1 tbsp mirin
- 1 tbsp soy sauce
- 1 tsp chicken stock powder
ÉTAPES
Slice the green onion into thin diagonal pieces, separating the green and white parts. Slice the shiitake mushrooms thinly.
Heat sesame oil in a pot over medium heat. Add the beef and grated garlic, cooking until the beef changes color. Add the white part of the green onion and shiitake mushrooms, stir-frying until softened. Mix in gochujang and ground sesame seeds until well combined.
Add the soup base ingredients (water, sake, mirin, soy sauce, chicken stock powder) and bring to a boil. Skim off any foam, cover, and simmer on low heat for 5 minutes. Add the boiled udon noodles, loosening them in the soup. Once the noodles are heated through, add the green part of the green onion and mix well.
