INGRÉDIENTS
Main Ingredients
- 200g glass noodles
- 🥕 1/2 carrot, julienned
- 🥬 1/3 bunch spinach
- 🧅 1/3 stalk green onion, chopped
- 🥚 3 eggs
- 🧂 1 pinch fine salt
- 3 sheets fish cake
- 1 tbsp sesame oil
- 1 tsp cooking oil
Seasoning
- 4 tbsp chili powder
- 🍬 2 tbsp sugar
- 2 tbsp sesame seeds
- 4 tbsp soy sauce
- 3 tbsp vinegar
- 4 tbsp corn syrup
- 🧄 1 tbsp minced garlic
- 3 tbsp sesame oil
Noodle Cooking Sauce
- 1 tbsp fish sauce
- 1 tbsp soy sauce
ÉTAPES
Soak glass noodles in water for at least 30 minutes.
Julienne the carrot.
Heat cooking oil in a pan, add carrot and a pinch of salt, stir-fry for 1–2 minutes.
Boil water in a pot, add a pinch of salt, blanch spinach briefly, then rinse in cold water and squeeze out excess moisture.
Mix the seasoning ingredients in a bowl and add chopped green onion.
Beat eggs with a pinch of salt, cook in a lightly oiled pan to make an egg sheet, then slice into strips.
Blanch fish cakes in boiling water for 1–2 minutes, then slice into strips.
Boil water, add soy sauce and fish sauce, then cook the soaked glass noodles for 6–10 minutes. Drain and mix with 1 tbsp sesame oil.
Arrange noodles in a serving dish, top with carrot, egg strips, spinach, and fish cake.
Drizzle the prepared seasoning sauce over the dish.
