ÉTAPES
Sprinkle salt on both sides of the fish bones and let them sit for 5 minutes. Pat dry with paper towels and cut into 2–3 pieces.
Heat vegetable oil in a frying pan to a depth of 1.5 cm at 160°C. Fry the fish bones, turning occasionally, until lightly colored for about 6–7 minutes.
Increase the heat and fry for an additional 3 minutes until crispy. Remove and drain excess oil.
Serve on a plate and sprinkle with finishing salt.
